This version is a nod to Matt's Sassoferrato brand, as it is made from Sangiovese grapes, rather than the traditional Pinot Noir. “Blanc de Noirs” translates to “white from black,” and is the traditional term for sparkling wine made from red wine grapes exclusively. This wine owes its complexity and richness to extended aging exceeding two years on the yeast. This is a beautiful and sophisticated bubbly. It tantalizes the palate with yeasty honeycrisp apple, and cherry blossom aromas.
